The year is humming along nicely and we have a host of special offers and competitions for you in this month’s issue.

NH The Lord Charles recently welcomed our new Executive Chef, Bernard Steyn – please read on to get to know Bernard a little and find out what you can expect from the NH kitchens under his guiding hand.
I’d also like to remind you to reserve your place at the NH The Lord Charles 2010 Charity Ball. This year’s event takes place on 29 May, and we hope to exceed previous years’ Charity Balls in raising much needed funds for ECHO and Imibala and the important work they do in the community.

Spotlight On...
NH The Lord Charles welcomes Bernard Steyn
NH The Lord Charles’s new Executive Chef, Bernard Steyn, is a dyed-in-the-wool foodie. Having first gotten his love of great food and careful cooking from his mother’s kitchen and the dishes she prepared there, Bernard is a proudly self-taught chef with broad experience and a special taste for wholesome and healthy international and traditional South African cuisine.
Having recently returned from East Africa, where he worked on the pre-opening project of a new twenty-one floor, five-star hotel in the centre of Dar es Salaam, and before that, as Group Executive Chef for Sentido Hotels and Resorts, with five properties on the coast of Kenya and in Zanzibar, Bernard is no stranger to the hospitality industry and preparing fine food with flair.
In South Africa, Bernard honed his craft as a fresh food specialist for one of the country’s leading food retail groups, and also completed in-house training at the Mount Nelson and Cape Sun Hotels, as well as the Park Hyatt in Rosebank, where he worked as Chef de Cuisine. He also worked as Executive Chef across the border, in Zambia, for the Sun International Group.
Bernard ascribes his personal tastes and attitude toward the preparation of food to his unconventional training, which allowed him to develop his own style, free of institutional restrictions, and taught him the value of hard work and total commitment. His describes his kitchen as a place of complete freedom, where all chefs are able to experiment and share ideas in order to create dishes that have a good combination of texture, colour and taste.
Bernard confesses to having a special fondness for Asian food, both contemporary and traditional: “As far as I am concerned, nothing beats lemon grass, mint, basil, coriander, fresh ginger, fresh limes, crunchy, sweet vegetables, and tropical fruits; the freshness of the earth and everything that is healthy, wholesome and original is good for me to cook with. I simply adore the delicious traditional eats and bites that one can find on the busy streets of Bangkok and all other regions of Thailand; such diversity is difficult to find anywhere else in the world.”
His great love of fresh tastes and styles finds expression in his own cuisine, which is also a reflection of his striving to live a healthier lifestyle, and is characterised by the minimal use of animal fats and oil: “It is important to consider one’s eating habits and make certain small changes to help one have a better lifestyle. When we eat healthier foods, we are able to sleep much better and have better concentration, and we feel more energetic and enthusiastic... and life is great!”
And since these are all things we also hold very dear at NH The Lord Charles, we are looking forward to working with Bernard and enjoying many fabulous, healthy meals with him!

Recipe Of The Month
This month, we’re featuring a recipe by NH Plettenberg Bay’s Executive Chef, Sheldon Conway.
“Salmon Trout Gravad Lax is a traditional Swedish specialty. It’s a lightly dry-salted salmon or Chilean trout, marinated with dill, lemon zest and cracked black pepper. I serve it as a starter, accompanied by a rocket salad with a honey, mustard and chilli vinaigrette.”
